No Take Out Here

[From our pantry to your table...]

When my husband had a taste for a quick takeout meal, we glanced in the freezer and low and behold, we were able to put together a wonderful dinner for two. By just adding a few more simple ingredients that you may already have handy in your cabinet, this was a breeze to whip up in no time using several food items (frozen packaged skinless/boneless chicken breasts, ginger soy meal kit) which we received from World of Difference and Life House Church Food Pantry. This is my take on how to bring symphony in your mouth with a Taste of the Orient.

Items you will need:

4-5 skinless boneless chicken breast, cut into thin 1/4" slices (Pantry Item)

Veggies and Noodles Meal Kit (Pantry Item)

Extra Virgin Olive Oil

Soy Sauce

Water or broth (chicken/vegetable)

GINGER SOY CHICKEN RECIPE

Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.

Add chicken (in batches if necessary) and season with

salt and pepper. Cook for 3 to 5 minutes or until cooked through. Remove from skillet.


Reduce heat to medium and add remaining tablespoon of oil to the skillet.

Add packaged veggie mix (kale, broccoli, brussels sprouts, bok choy, green cabbage, pea pods, and carrots) and continue to saute for 3 to 4 minutes, stirring frequently, just until crisp tender.


Remove noodle pouch from bag. Cut or pierce pouch and heat in microwave for 45 seconds to 1 minute. Shake noodles apart with tongs and toss into pan with chicken and vegetables.


Add sauce from packet and cook for an additional minute with 1/2 cup of water to make a light soup broth, although I opted out of having a soup base by omitting the water and used only half of the sauce packet.


Plate, serve, add a dash of soy sauce if preferred, and enjoy! You can definitely adjust this to your liking without meat, adding tofu, or by substituting pork or beef in place of chicken. I hope you enjoy it as much as I did. Bon appetit!
